Tapan Bose's Pureed Eggplant

1 eggplant
2 onions, cut into small chunks
1 tablespoon oil
1/4 teaspoon turmeric
1 teaspoon paprika
2 fresh tomatoes, cut into small cubes
1 teaspoon garam masala
2 tablespoons chopped cilantro

Bake eggplant in a 350 degree oven for 20 minutes, turning frequently. Remove. Peel off the skin under running cool water. Place in blender and puree. Set aside. Heat oil. Add onions and fry until clear. Add turmeric and paprika. Fry for a few more minutes. Add tomatoes and eggplant puree. Cook over low heat, stirring occasionally until a golden brown color. Sprinkle with garam masala and cilantro.

Garam Masala

An aromatic Indian blend of spices usually features cardamon, cinnamon, cumin and cloves. Usually sprinkled directly on food near the end of cooking or just before serving.
